Of all the delectable plant-based desserts I’ve tried, this one—hands down—is my current favorite. It is so good and so rich that no one will ever be able to tell that this pie (or fudge) is both dairy-free and entirely vegan! Seriously, you have to try this one. Right now.
For the chocolate filling (or fudge—it’s plenty firm enough), you’ll need:
1 block extra firm tofu
1.5 cups dark chocolate chunks melted in a pan (I recommend Ghirardelli)
1/2 cup creamy peanut butter
1/4 cup almond milk (or any other plant-based milk)
1-2 tablespoons Hershey’s cocoa powder (or a scoop of your favorite chocolate protein powder for even more protein)
1 pinch of salt and 1 pinch of coffee
Blend it all together and spread it out either in a pie crust or by itself in a pie plate. Refrigerate for a few hours, and then prepare to have your mind blown by how AMAZING this is!
