Here’s a healthy, easy-to-make recipe that yields 8 servings of protein-packed nutrition that I learned from by brother, Shawn! We call it “Shawn’s Potatoes” but it’s universally known as Dublin’s Coddle—and you’re gonna LOVE IT!! It’s low on calories (285) and yet it packs 13g of protein and a whopping 110% of the daily recommended dose of Vitamin C!

Ingredients:
1 sweet onion
3 bell peppers (any color)
1 bag of small or medium sized red potatoes
2 packages of Beyond Sausage (8 links total)
Sazon seasoning (and/or whatever seasoning you like! 🙂

Recipe:
Preheat oven to 350 degrees.
1) Chop onion, peppers, potatoes, and sausage links into bite-sized pieces.
2) Fill large pot with potato chunks and water; boil over high heat until potatoes begin to soften. Remove before completely cooked (we will bake this dish at the end; there, the potatoes will finish cooking).
3) Over medium heat, saute onions until golden brown. Add peppers. Add sausage. Season to taste.
4) Combine all ingredients in a large rectangular pan and bake at 350 for 30 minutes. Serves 8.
